30 Days of Recipes - Banana Bread

Banana Bread

1/3 cups shortening (I use olive oil or lard.)
3/4 cup sugar (white)
2 eggs
1 3/4 cups flour (whole wheat)
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 cup mashed ripe bananas
1 cup chopped walnuts (optional)

Preheat oven to 350 F. In a large bowl, cream together shortening and sugar; add eggs and beat well. Sift together flour, baking powder, salt and baking soda. Add to creamed mixture; stir until mixed. Stir in bananas and nuts, blending well.

Pour into well greased 9 x 5 x 3 loaf pan. Bake for about 50 minutes or until done. Remove from pan; cool on rack. Wrap and store overnight.

Banana bread sounds so delicious, but you're not going to convince me to make it from scratch when I know there is a perfectly good boxed version at the store that eliminates all of that work. Ha! Kudos to you for being brave enough to make the real thing. :-)
