Easy Raisin Cake

INGREDIENTS
- 2 cups raisins
- 4 cups water
- 1 cup lard
- 2 teaspoon baking soda
- 1 teaspoon salt
- 1.5 cups white sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 4 cups (just under) whole wheat flour
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9 x 13 inch baking pan.
- In a large saucepan boil the raising with the water for 10 minutes. Add the lard and let cool.
- While it's boiling combine the flour, soda, salt, sugar, cinnamon, and nutmeg in a bowl and mix well. Add the raisin mixture and mix well. Pour batter into a lightly greased 9x13 inch baking pan.
- Bake at 350 degrees F (175 degrees C) for 35 minutes. Serves 4 hungry kids and their mom for lunch and snack!
