30 Days of Recipes - Easy Raisin Cake

Easy Raisin Cake

INGREDIENTS
  • 2 cups raisins
  • 4 cups water
  • 1 cup lard
  • 2 teaspoon baking soda
  • 1 teaspoon salt
  • 1.5 cups white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 4 cups (just under) whole wheat flour

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9 x 13 inch baking pan.
  2. In a large saucepan boil the raising with the water for 10 minutes. Add the lard and let cool.
  3. While it's boiling combine the flour, soda, salt, sugar, cinnamon, and nutmeg in a bowl and mix well. Add the raisin mixture and mix well. Pour batter into a lightly greased 9x13 inch baking pan.
  4. Bake at 350 degrees F (175 degrees C) for 35 minutes. Serves 4 hungry kids and their mom for lunch and snack!
