30 Days of Recipes - Homemade Mac and Cheese

Homemade Mac and Cheese (modified but found in the "Family Table", page 94)

macaroni
boiling water
1 Tbsp oil
2 tsp salt
1 chopped onion
1 chopped green pepper
1 can of cream of mushroom soup (I like the cream of celery better.)
2/3 cup salad dressing (mayo type substance)
2 cups grated cheddar cheese (about half a 900g bar of cheese)

Cook the macaroni; drain; return to pot. Saute onion and green pepper in a frying pan. Add to macaroni. Put soup and mayo into a bowl. Stir vigorously. Add grated cheese. Stir. Add to macaroni. Turn into ungreased 2L casserole dish. Bake uncovered at 350F for 30 minutes. Serves 6. (I usually double and serve the leftovers for another meal.)
