Mom’s Favorite Pancakes – I use this recipe weekly

Mom's Favorite Pancakes (not my mom's but someone's mom's)


(This is half the recipe I received)


2 cups of flour
1/3 cup brown sugar (I just use whatever I have)
4 tsp baking powder (or 20mL; I have a spoon that is a 10mL spoon, so I made the conversion)
1 tsp salt
1 1/2 cups milk (I bump this up to match the cups of flour so - 2 cups)
4 Tbsp butter (I use oil, and 60 mL)
4 eggs


Mix dry ingredients and wet ingredients together in separate bowls. Then mix together. (I do all the dry then add all the wet on top.) Cook on griddle or lightly buttered skillet. Serve with pure maple syrup.


There is a lot of eggs in this recipe but the extra protein seems to make the kids stay fuller longer.
