When J asks me to make cookies, these are the ones he wants. They are like a brownie, but not really. He doesn't like brownies, but he loves these cookies. Well, we all do. This is taken again, from Company's Coming Make Ahead Meals cookbook, but I've made a few modifications for our tastes. (It's tripled for freezing purposes.)
Chewy Chocolate Cookies
3 cups butter or margarine
3 cups white sugar
6 eggs
6 tsp vanilla
6 cups flour
2 cups cocoa
1 tbsp baking soda
1 tsp salt
4 cups chocolate chips
Cream together butter and sugar in a large bowl. Beat in eggs, 1 at a time. Add vanilla and mix some more. Stir together the dry ingredients. Gradually stir into butter and sugar mixture. I always end up using my hands at this point; it's very stiff. Stir (more like fold) in chocolate chips. Roll into 1 inch balls. **Place on ungreased cookie sheet. Flatten slightly with bottom of a glass or your hand. Bake at 350 for 10 minutes. Let stand for 3 min before removing. Makes about 12 dozen.
**TO MAKE AHEAD AND FREEZE: Place flattened balls on a cookie sheet, close together but not touching. Freeze, uncovered for about two hours. Remove balls to a storage container and return to freezer; don't forget to label the container. They are good frozen for about 6 months.
*** TO BAKE FROM FROZEN: Thaw on ungreased cookie sheet (12 - 15 on a sheet). They don't spread out much, so they can be a little closer together than some cookies. Bake as above.
