Odd–last minute Meal

I usually like to work from a menu.  I use Google Calendar to plan my menus a couple of months at a time.  (I tried three months but it’s too long.)  However, since the beginning of the year I have really gotten away from planning my menus.  Part of the reason for this is because I have not been doing freezer meals.  When I have meals in my freezer we eat so much better.

 

Our “fall back” meal is spaghetti and sauce.  I do not like spaghetti and sauce, but I have realized the issue is the sauce.  We tend to buy what’s on sale or what is cheap.  One time a higher end brand was on sale and so we purchased a few jars.  I actually enjoyed spaghetti and sauce.

 

I would have to say that our more odd – last minute meal is:

 

fried eggs, toast, pork and beans

Menu Planning

I just planned my menu until the end of December!  I’m sure that things will be changed up from time to time, but I love the peace I feel knowing I can look at my calendar (Google Calendar) and know what I’m serving.  I still have to go shopping for the groceries of course.  I have a couple of mini Big Cook times planned.

 

So for this week, here’s what is planned:

Tuesday – dunno.  Unfortunately.

Wednesday - tacos

Thursday – nuggets and fries

Friday – pancakes, bacon and eggs

Saturday – potato soup

Sunday – curried beef (a Big Cook recipe, but I’m only making one this time around)

Monday – chicken alfredo linguini

This weeks' great recipe

Thursday night supper is almost always my favorite.  It's so easy.  I even had Marrissa and Wyatt prepare it this week, with supervision of course.  Are you ready?

Turn on the oven to 400 degrees.  Find two cookie sheets.  Grab a box of nuggets and a bag of fries from the freezer.  Put the nuggets on one sheet and the fries on the other.  (Or if Daddy's home, grab two bags of fries and cook the nuggets in the little oven.)  Put both cookie sheets in the oven and let them cook for about 30 minutes to an hour.  Serve while hot with plum sauce and ketchup!

Clean up is easy too!

Menu Planning Thoughts

I have not been planning a menu and I’m noticing my stress levels rising around the supper hour more and more each week.  When I don’t have a plan I am floundering and supper is served later and later.  I feel like I am always behind and then I am staying up later because the kids are up later.  I am finding it very frustrating.  Part of the problem though is the lack of groceries in the house.  We need to get out and purchase some food.  However, we are waiting on some decisions regarding our budget and income before spending a bunch of money on groceries.  For now we are eating from the pantry and making due.  It’s not terrible.  The cupboards are not bare.  We are simply out of the easy to prepare stuff.  What’s left takes a little more planning on my part.  So I’m not planning a menu because it’s so much work to even plan that menu.  It’s laziness on my part and I should just get over it, but that’s where I’m at; just bein’ honest.

Menu for the Week - March 8-14

Good morning.  Just a quick post this morning.

I don't know what order these meals will be served in, but here's what I plan for us to eat this week:

Nuggets and fries (served Monday night)
Creamy Lemon Pork (only we have no pork in the house so it might be chicken)
Freezer Meal
Meatloaf
Pancakes
Nuggets and fries
Spaghetti and sauce

Instead of one of those meals I imagine we will eat out / order in.

The plan for our week, with meal ideas.

Well, the new month is upon us! And is filling up fast.

Monday is an afternoon with friends from church with supper at their home. Monday evening is Simply Sensational Divas Review Twitter Party. (Make sure you sign up and join in! Giveaways to be announced and won!!!)

Tuesday is baking (hopefully) with Grandma Irene. (For those of you who knew she was ill, I just wanted to let you know that she is doing much better.) J has a meeting that night, so supper will have to be something quick.

Wednesday is library day.

Thursday is J's fire practice, so something quick again.

Friday is still totally empty!! WOOHOO!

Saturday is a "Welcome to our World" party for a new baby in our church! Potluck meals are always so fun!

Perogies

Perogies are "the name most commonly used in English speaking areas to refer to a variety of Slavic semicircular (or, in some cuisines, square) boiled dumplings of unleavened dough stuffed with varying ingredients. In English, the word pierogi and its variants are pronounced with a stress on the letter "o"." from Wikipedia

Apparently there are dessert perogies, but we've only ever had potato based filling - potato and onion, potato and bacon, potato and cheese. We eat them with sour cream or ketchup. They are a cheap and filling meal.

Feeling Disconnected

I've been struggling for the last little while with feeling disconnected from everything. My kids and their education. My spouse. My house. My friends - both online and IRL. My blog. My meal planning and groceries. My laundry. Everything seems out of my control and I feel as if someone else is living my life and spending time with my family.

I know some of the reasons I'm feeling this way. I haven't been getting enough sleep at night and have not been napping during the day. I have been fighting with headaches all week; there is one always lingering in the background. Baby R is especially needy lately for whatever reason. DH has been buying the groceries and I have not been paying attention to what he's buying and I haven't been making a menu. If my morning routine and evening routine are off, my days are all off! I haven't been getting any exercise except going up and down the stairs. I've been taking my vitamins, but not drinking enough water.

These are all changeable things. I can get my routines on track so I am getting in enough sleep, and schooling and menu planning. I can up my water intake. I can allow J to take over the child care he is willing to do; I can be gracious in accepting his help in the home and chose not to feel like he's taking over and doing my job and therefore I'm not good enough.

Friday was the beginning of the change. I took out the meat for supper the night before. I kept up on the dishes all day so they didn't pile up. I got about four loads of laundry up drying. I put away all the clothes that were dry and waiting to be folded and put away (my goal for February). I had the children clean up their toys really well and got a start on the basement toy room. I'm hoping to keep up on that momentum.

This post, at Simple Marriage, got me on this line of thinking. One of the biggest things I've noticed is being disconnected from my dh. And it's silly. He's not even working full time and so we are together a lot more than usual! We should be connecting more. I plan to work some of those suggestions from that article into our life. This time of year (March mostly) is especially hard for us and we need each other more. So, look out, Baby, here I come! <> haha

The bread recipe I use. . . when I make bread

Copy and pasted from my old blog.

Here is the bread recipe that I use. It's so simple and really quite fast. I've had non-bakers use this recipe and do very well at it. Their families raved!


Our Bread Recipe

2 Tbsp yeast
1/2 cup water
1 tsp sugar

Combine and set aside. This will bubble up and create a foamy mixture.

2 1/2 cups hot tap water
6 Tbsp oil
1/2 cup sugar
1 tsp salt
4 cups flour

Mix this together. Add yeast mixture. Mix well. When smooth, add

2 eggs

Then add

2 cups flour (more like 4 cups to make it the right consistency)

Knead 8 - 10 minutes. Rise in bowl for 20 minutes. Punch down. Allow to rise for another 20 minutes in the bowl. Make loaves or buns. Let rise for 30 minutes. Bake at 350F for about 25 minutes (for loaves). This makes three loaves in my house - tall and yummy loaves.

I was stretching it to four loaves but the loaves ended up small and not very good for sandwiches or toast.

Our Thanksgiving Day Long Weekend

We took it easy in the morning. DH slept until after lunch. He's been so incredibly busy and stressed with work and sleeping in is one thing that he loves to do from time to time. We let him sleep until he decided to get up. We just carried on as if he were not here. We played and watched TV and spent time on the computer. Once he was up and going we got busy! What an afternoon and evening!!!

J started by running over to work and borrowing an old washing machine that he'd removed from one of the homes. He set it up outside with the garden hose and a very long extension cord. We let it wash through once or twice with nothing in it to get the soap residue out. While that was washing we started picking carrots from the garden. We topped and filled up the wheelbarrow with just carrots.

When the wheelbarrow was full we started loading the washer. We did this twice and then took a big break to eat and run to the store.

When we got back CJ and I started the second step of the process while K and J continued out in the garden to wash a third load of carrots. Each load filled a Little Tykes wagon!!! J figured we pulled in and processed 3 bushels that night.

The second step was cutting the end off and putting them through the food processor to slice them to freeze! Ready to eat. So I got a knife and started topping while CJ put them through the processor.

Once we had a very large bowl full of sliced orange yummy-ness, she started bagging. Bagging was I think the hardest part of the job! Once we had a bag full, we handed it to W (20mo) to take to the freezer. He'd hop up on a little red chair, open the lid and drop the bag in! He was SOOOOOOO proud of himself! He would run back for the next one and if we didn't have one ready, he was so impatient!

By this time it's getting close to 7 or 8 o'clock at night and the third load is still outside. I had CJ put the littles in the tub and she got in with them while K helped me slice and bag. We got a lot done before I sent her to the tub too. I got the littles and CJ dressed in jammies. Then we pulled out the milk, strawberry and chocolate sauce and protein powder for milk "shakes" (no ice cream though). So, they drank their suppers, watched Dora the Explorer and then I headed them off to bed.

J and I continued working on loads 2 and 3 until close to 11 o'clock! Some hints, if you want to give this a shot:

  1. When pulling them out of the garden, have lots of "runners" - little kids with buckets to run back and forth to the wheelbarrow. Even the littlest can have a job.
  2. Knock a lot of the dirt off and all the tops before putting in the washer, especially if you are using your normal day to day washer!
  3. When cutting ends off, pick large carrots and lay them all the same direction. It seems like you are wasting time sorting but really it goes a lot faster! No sorting through little ones to get a decent sized carrot to cut.
  4. Place carrots into feeder (food processor) big end down.
  5. Don't slice the little ones! They are bite size anyway. Just freeze them whole or save for snacking.
  6. Don't pull more than you can process in a day. Take lots of breaks if you start to get tired! After 7 hours, I was wiped!
  7. Snacks, besides what you are "putting up", are great too. We had chips and dip, pop, coffee and chocolate bars (those mini ones).
  8. For a family of six (with little kids) one medium ziploc bag is perfect for a meal. That's the size we freeze in.

We didn't go to church this morning. We slept in, all of us. J and I actually were in bed until close to 11AM. It was great! The kids just watched TV and played. We took it easy for most of the day and only started on the carrot process around 3PM. That process started with re-organizing freezers.

Saturday night we just threw the carrot bags in wherever they would fit. We have two little freezers. One will be for only carrots at this point and the other for everything else. So I had to remove what was in the "carrot freezer" and lay the carrot bags nicely to get the best use of space.

Part of this process was to clean out the build up of ice on the edges of the freezer. I, being 37 weeks pregnant, could not get the ice out of the bottom! So, I put little M (3yo) in the freezer with a dustpan to get the ice out!

Saturday's work filled the freezer a little more than half full. And the "everything else freezer" is 3/4 of the way full with other stuff.

The cutting and bagging part of the process started around supper time on Sunday. With all the help that we got from K and off and on from the other kids we were done in an hour.

We have WAY more carrots than we have storage space. We are not set up with a cold storage room so freezing is the best option for us.

Also, we're taking a box over to a neighbor and we've found a family whose garden did not do well this year and they are coming over to help pull up the other half of what we planted. That's Monday's job. We'll see if that gets blogged about or not!

This Week's Menu

Well, this week I didn't plan specific meals for specific days but rather choose meats to buy and I'll make up what we are in the mood to eat.

Lunches will consist of sandwiches, perogies and macaroni and probably leftovers too.

Suppers are pork (had that last night), chicken (crockpot), spaghetti, burgers, and something with stew meat.
